Bran is the wheat grain's outer shell, and it is far more active than the flour inside. It contains arabinoxylans, branched sugars that bind to the hair's surface and form a fine, continuous layer.

That layer acts as a shield against city air. Soot and exhaust particles are small enough to lodge between the hair's cuticle scales, where they are hard to wash out and gradually leave hair dull and gray. With the protective layer in place, the particles have nothing to grip, and they rinse away at the next wash.

The layer also smooths the hair's surface. The cuticle lies flat, light reflects evenly and gives shine, hair becomes softer and easier to detangle, and it draws less moisture from the air. For curls that means a more cohesive shape that holds through the day.
